Easy weeknight dinner you can grill in minutes!
With ingredients that you most likely have around your home, this simple salmon recipe is a great addition to your weeknight meal routine. This salmon recipe that makes 12 servings takes 10 minutes to prep, 30 minutes to marinade, and 8 minutes to grill.
Fish Cooking Techniques:
Cooking time for seafood will depend upon the thickness of each piece, but like other foods, seafood continues to cook after being removed from the heat. To avoid overcooking, take fish off the grate when the center begins to turn opaque and the thickest part starts to flake when pressed with a fork. Most fish needs cooked to an internal temperature of 146 degrees Fahrenheit.

GRILLED SALMON SKEWERS
INGREDIENTS:
- 1 lb. skinless salmon filet
- 12 wooden skewers, soaked in water
- 1/4 C. soy sauce
- 1/4 C. honey
- 1 T. rice vinegar
- 1 tsp. minced fresh gingerroot
- 1 clove garlic, minced
- Pinch of pepper
- 12 lemon wedges
Lightly oil the grill grate and preheat grill to medium‑high heat. Slice salmon filet lengthwise into 12 long strips and thread each strip on a soaked wooden skewer. Place skewers in a shallow baking dish. In a medium bowl, whisk together soy sauce, honey, vinegar, minced gingerroot, minced garlic, and pepper. Pour mixture over skewers in baking dish and let marinate at room temperature for 30 minutes. Pour remaining marinade into a small saucepan. Place saucepan over grill and bring mixture to a simmer. Thread 1 lemon wedge onto the end of each skewer. Place marinated skewers over heated grill and cook for 4 minutes on each side brushing often with simmering marinade mixture. Salmon is done when it flakes easily with a fork.
