Spam Turkey
Yield: Two “turkey” tins, one 9-inch loaf pan or two 6-inch loaf pans

(6) 12 oz. Oven Roasted Turkey Spam tins
2 Large Eggs
1 Medium Onion, finely diced
1 Tbsp. Garlic, finely diced
2 stalks celery, chopped finely
1 box chicken, turkey or cornbread stuffing mix (Stove Top, etc.)
1/8 tsp dried thyme
1/8 tsp dried rosemary
1/8 tsp. dried sage
Freshly ground pepper to taste
2 tbsp butter
1 ½ cups heated chicken stock
1/8 c. Half and Half or Whole Milk
Nonstick turkey tin (available online)
Turkey flavored gravy mix
1 cup water
OR use your favorite homemade turkey gravy recipe from pan drippings or turkey stock
Optional: Jellied cranberry sauce
Preheat oven to 350 degrees.
Spray turkey pan with nonstick spray and set aside.
Sauté garlic, onion, and celery in butter on low heat until onions are translucent and soft. Set aside to cool.
Heat chicken stock in small saucepan over low heat until warm (or in microwave in microwave safe bowl).
In a large bowl combine stuffing mix, heated stock, cooled sauteed vegetables with butter, thyme, sage, and rosemary. Fluff with fork to combine and cover and set aside for five minutes.
Mash the SPAM with a fork and combine SPAM, eggs, half and half or milk, and stuffing in food processor. Pulse until well combined and it begins forming into a ball. (You may have to do this in two batches depending on the size of your food processor.) If no food processor, mash everything well with clean hands.
Separate SPAM mixture into two equal portions and shape into turkey tins or loaf pans. If using turkey tins, please cool the mixture for one hour. If using a loaf pan(s) you may bake immediately.
Place turkey tins or loaf pan(s) on a baking sheet and bake at 350 degrees for 60-75 minutes.
Once cooked, remove from oven and place on a baking rack to cool. If using a turkey tin, please invert on a plate to cool slightly.
While turkey is cooling, make gravy mix according to directions and pour over turkey once finished.
Optional: Serve with jellied cranberry sauce on the side.
