TIME: 45 MINUTES - YIELD: 4 SERVINGS

Wake up your taste buds with this breathtaking breakfast musubi. Bacon and SPAM® Teriyaki tag team for a meaty helping of protein to kick off your day. The egg and cheese will remind you that this heavenly creation is in fact a breakfast sandwich. The nori and rice will stop you from ever buying a normal fast-food breakfast sandwich again.

INGREDIENTS

  • 4 slices SPAM® Teriyaki
  • 4 slices Hormel® BLACK LABEL® bacon
  • 4 slices Cheddar cheese
  • Furikake
  • 1 sheet nori
  • 2 cups rice (uncooked)
  • 3 eggs
  • Mirin
  • 1 teaspoon sugar
  • Salt
  • 2 teaspoons dashi (optional)

DIRECTIONS

  1. To make the Hollandaise sauce, fill the bottom of a double-boiler part-way with water; make sure water does not touch the top of the pan. Bring the water to a simmer. In the top of a double boiler, whisk together egg yolks, lemon juice, and 1 tablespoon water.
  2. Add butter to the egg yolk mixture 1 or 2 tablespoons at a time, whisking constantly. If sauce becomes too thick, add 1 to 2 teaspoons hot water. Whisk until butter is incorporated. Whisk in salt; remove from heat. Cover pan.
  3. To poach the eggs, fill a large saucepan with 3 inches of water. Bring to a gentle simmer; add vinegar. Carefully break eggs into simmering water; cook 2 1/2 to 3 minutes or until whites are cooked and yolks are still soft in center. Remove eggs from water with a slotted spoon; set on a warm plate.
  4. Meanwhile, cut SPAM® Classic into 4 (1/4-inch-thick) slices. In medium skillet, heat SPAM® slices over medium-high heat until lightly crisp
  5. Place English muffins, cut-side-up, on serving plates. Top evenly with spinach, SPAM® slices, tomato, and poached egg. Drizzle with Hollandaise sauce. Sprinkle with chives, if desired. Serve immediately.

DIRECTIONS

  1. Heat oven to 350°F.
  2. Place chips in 13×9-inch baking dish.
  3. In a bowl, combine remaining ingredients; mix well. Pour over chips.
  4. Bake chilaquiles 25 to 30 minutes or until eggs are set.

TIME: 30 MINUTES - YIELD: 9–10 SERVINGS, DEPENDING ON SIZE

Tacos just got a lot more exciting with this modern take on the Al Pastor (taco made with spit-grilled pork) featuring SPAM® Classic. Sweet, spicy, and full of fresh flavors, your taste buds will surely have a fiesta.

INGREDIENTS

  • 2 (12-ounce) cans SPAM® Classic, cut into small cubes
  • 4 garlic cloves, smashed
  • 2 teaspoons ground cumin
  • 6 dried cloves
  • 1 chipotle in adobe, chopped
  • 1 1/4 cups pineapple juice
  • 3 teaspoons achiote paste
  • 1/3 cup white vinegar
  • 1 1/2 tablespoons dried oregano
  • Small tortillas (flour or corn)

INGREDIENTS

  • 2 (12-ounce) cans SPAM® Classic, cut into small cubes

  • 2 teaspoons ground cumin
  • 6 dried cloves
  • 1 chipotle in adobe, chopped
  • 1 1/4 cups pineapple juice
  • 3 teaspoons achiote paste
  • 1/3 cup white vinegar
  • 1 1/2 tablespoons dried oregano
  • Small tortillas (flour or corn)

DIRECTIONS – SPAM®PASTOR

  1. In a mixing bowl, combine garlic, cumin, cloves, pineapple juice, chipotles, oregano, achiote paste, and vinegar. Whisk
    until incorporated.
  2. Cube the SPAM® Classic into 1/4-inch pieces and place in a bowl. Cover with plastic wrap and refrigerate for at least 4 hours (overnight is best).
  3. In a large skillet, cook SPAM® Classic on medium heat until golden brown.

PICO DE GALLO

  1. Dice tomatoes, red onion, and jalapeño, and place them in a large bowl. Add cumin, pineapple juice, salt, and cilantro to the mixture. Toss with a mixing spoon. Refrigerate.

JICAMA SLAW

  1. Peel the jicama. Shred on a box grater into a bowl. Thinly slice cabbage and scallions, and place in with the jicama. Add salt and lime juice. Toss well to develop the flavors.

Tacos

  1. Heat tortillas in a large skillet. Spoon desired amount of SPAM®pastor into a tortilla. Top with pico de gallo and jicama slaw.
